Protein Muffin Bread

I was fairly stressed out yesterday so I decided to make some healthy bread. I didn’t have a few things so I had to wing a lot of the recipe. In the perfect world, I would of had some whole eggs and a bread pan, but I had to make do with what I had. I used a muffin mold so thats why it is called Muffin Bread.

They turned out beautiful! I made a batch of 12, I ate two the night I made them and I ate 6 this morning. My friends ate 4. I had two tablespoons of peanut butter in between all of them and they were awesome!

TASTE REVIEW

My initial reaction looking at the Muffin Bread was that it reminded me of some sort of decadent chocolate muffin. The first bite left me fairly disappointed. The bread has a very neutral taste, it has a hint of chocolaty flavor but it is very mild. It is sort of spongy but not very noticeable. With peanut butter, jelly, or Nutella, it literally tastes like real bread and you can hardly tell the difference. I chose to put peanut butter on all of mine and the texture and everything came together very nicely and it is definitely a good eat!

I had three girls try them as well as one of my roommates. All but one of them liked it. The person who did not like it is a very picky eater and didn’t appreciate the texture as much. Egg yolks would have helped, but with 10 egg whites the texture will a bit off.

I tried it again this morning, and the texture was much more like bread, so letting them sit overnight will be helpful.

INGREDIENTS

*Preferred

  • 10 Egg Whites or 8 Egg Whites*
  • 150 Grams of Flaxmeal (About 2 Cups)
  • 1 Scoop of Whey
  • 1 TSP of Baking Powder
  • 1 TBSP of Olive Oil
  • 2 TSP of Cocoa
  • 1 Packet of Splenda
  • 1

STEPS

  1. Preheat oven 450 degrees.
  2. Put all the dry ingredients in.
  3. Mix the dry ingredients.
  4. Put the eggs in.
  5. 2

  6. Beat until you get a mixture like the picture.
  7. 3

  8. Pam your pan or muffin mold*.
  9. Pour your mixture inside.
  10. 5

  11. Pinch a small amount of oatmeal on top for decoration (Optional).
  12. Pop your batter into the oven.
  13. Leave it in for 20-25 minutes.

  15. Take out, leave overnight and enjoy!

OPTIONAL

Use jelly, peanut butter, or Nutella to add life to your bread.
