Egg and Tomatoes Dish
This was one of my favorite dishes as a child. It goes great with white rice.
INGREDIENTS
- Eggs
- Tomatoes
- Oil
- Salt
- Sugar
- Cooking Wine
STEPS
- Break open 5 eggs into a bowl.
- Beat these eggs together.
- Add 1/2 TBSP of Cooking Wine into the eggs.
- Pour 2 TBSPs of Corn Oil or Olive Oil [Olive Oil will gives eggs a green tint] into a skillet.
- Let this heat for a minute.
- Dump your eggs inside.
- Let this cook a little bit, and break it apart into small pieces, very similar to scrambled eggs.
- Take the eggs out into a bowl.
- Take 3 tomatoes, cut them into small chunks. [Take out the seeds/middle part if you can so the dish won't be as watery]
- Pour 2 TBSPs of Olive Oil into the skillet again.
- Let this heat for a minute.
- Throw in the tomatoes.
- Cover with a lid, after a few minutes the tomatoes should be done cooking and soft. The juices within the tomatoes will all be in the skillet.
- Throw in the cooked eggs in, and mix it up.
- At this point you can turn off the skillet and add salt/sugar.
- Add 1 TSP of salt.
- Add 1-2 TSP of sugar.
- Thats it! You are done. Enjoy!
