Pancake Glory

For the past week, I've been researching different pancake recipes all over the internet. I managed to combine the recipes and add a bit of my own stuff. I chose the ingredients most readily found in the house. This way, it is easy to make and hopefully there is no need for anyone to buy anything new.

The taste of the pancake is a bit off from what you expect a normal pancake to taste. The texture is pretty close though. I would rate this at a 6/10. I enjoyed it very much because it was a change from the boring bowl of oatmeal or eggs for breakfast. This healthy pancake recipe adds variety and a balanced breakfast for those who miss the originals. The bottom line is that it does taste amazing but more like a very good protein shake pancake. It would be a whole lot better with sugar free maple syrup, but it did not have this in the house.

INGREDIENTS (per serving)

Pancakes

  • 1/2 Cup of Low Fat Cottage Cheese
  • 1/2-3/4 Cup of Rolled Quaker Oats
  • 1 Scoop of Chocolate Whey Protein Powder
  • 2 TSP of Cocoa
  • 1 TSP of Cinnamon
  • 1 Packet of Splenda
  • 1 Whole Egg [Add 1-2 egg whites to this if you want it to taste better/more like a pancake, remove shell]
  • 1/4 Cup of Milk [Add just a bit of milk to get the thing mixing, less milk = thicker batter] or 1 TBSP of Milk

PROCEDURE

  1. Put all ingredients into a blender.
  2. Mix until into a consistent batter.
  3. Pour batter onto a skillet on medium heat over the stove.
  4. Flip the pancake after about a minute, just look to make sure it is cooked

OPTIONAL TOPPING

  • Try sprinkling a packet of Splenda on top as "makeshift" powdered sugar.
  • Use sugar free maple syrup.
  • Spread peanut butter on top.

OPTIONAL INGREDIENTS

  • Instead of Splenda, add 1/4 cup of sugar free maple syrup or a small amount of brown sugar. [I didn't have this]
  • Replace oats with quarter block of Tofu, for lower carbs.
  • Add banana/berries.
  • 1 TSP of Baking Powder
  • 1 TSP of Salt

Today, I have experienced the most amazing brownie ever, it is delicious and most importantly healthy. It is easy to make and takes less than 5 minutes to prepare. The ingredients are so simple that most households would have all of them except for one.

Taste wise, it tastes like a slightly less sweet version of a brownie. It is slighter chewier but for the ingredients involved in making it, it is heaven on a platter.

Sweet Potato

Sweet potatoes are amazing. They taste great and fill you up like no other. I try to have at least one sweet potato a day. Not only is it loaded with good vitamins and minerals, it mixes great with cottage cheese. Here is a recipe I created today that tastes absolutely phenomenal and leaves you extremely satisfied.

But first, here are the nutritional facts for a sweet potato...

Selection: Good-quality Sweet Potatoes will be firm and smooth-skinned. They should have few eyes, and those few eyes should be shallow. The coloring is tan to light-rose.

Avoid: Avoid product that is soft, wrinkled or has cuts in the skin. Sweet potatoes with white streaks or spots on the inside will be pithy.

  6. Put the sweet potato on the plate on top of the folder paper towel.
  7. Put it into the microwave for 5 minutes.
  8. At 2 minutes 30 seconds, flip it over.
  9. Move onto cottage cheese preparation.

COTTAGE CHEESE PREPARATION

  1. Put 1/2 a cup [or more] of cottage cheese in a bowl.
  2. Mix in 1/2 tsp of cinnamon and 1/2 tsp of cocoa into the cottage cheese.
  3. Mix together.
  4. Move onto putting it all together.

PUTTING IT ALL TOGETHER

  1. Take out the sweet potato from the microwave.
  2. Cut it hot dog style with a knife.
  3. Remove the skin.
  4. Cut up the sweet potato into small chunks.
  5. Drop the chunks into the cottage cheese mixture.
  6. Mix and mash it all together.
  7. Finally, sprinkle on 3 tsps of granola for every 1/2 cup of cottage cheese used [Adds texture, crunch, and sweetness to the meal]
  8. Enjoy

The reason I like this so much is because it is low on calories and high in nutrients. It fills me up like crazy and tastes great. Here is a more detailed breakdown with all the ingredients put together. For only 221 calories per serving, while filling you up? This is a great food for a cut.
